I’ve just now (I know, I’m a bit behind….) gotten around to digging into RSR Research’s excellent report on environmental sustainability in restaurants and the strategic importance of sustainable business practices.
The interesting data points are too numerous to mention, but RSR uses its popular ‘Winners’ and ‘Laggards’ framework to show how both groups leverage (or don’t) sustainability for competitive advantage and cost efficiencies.
I’ve derived a lot of value from 2009′s retail-focused report (Real-World Green), so its great to see the method applied specifically to restaurant sustainability.
